Veggies in the oven

Another adaptation of a non-vegan recipe! Do you know the filling of a quiche with veggies? That’s what this recipe reminds of! 🙂 Let’s see?

You will need:

  • 300 grams of turnip;
  • 200 grams of carrot;
  • 300 gramas of broccoli;
  • 300 grams of green beans;
  • 3 linseed eggs (3 tablespoons of grounded linseed + 9 tablespoons of water);
  • onion;
  • 4 garlic cloves;
  • olive oil;
  • 4 dl of vegetal milk;
  • 30 grams of corn starch;
  • salt;
  • pepper;
  • herbs.

Let’s start!

Preheat your oven to 180ºC.

Bake for 10 minutes the carrot and the turnip (cubes). Add the green beans and broccoli and let it cook for 8 minutes.

In a wok, sauté the onion and garlic cloves (chopped), until the onion turns golden. Add the vegetables and stir.

Meanwhile, make the linseed eggs and add to the vegetable milk. Add the corn starch and let it cook for a few minutes (do not forget to stir!). Season with salt, pepper and herbs.

Add the prepared with corn starch to the wok and stir until homogeneous. Pour the content into a pan and bake for 20 minutes. Hope you enjoy! 🙂
