Vegan tortilla

This tortilla is one of those recipes that we make at home when we do not know what we will eat. It’s easy to make, tasty and it’s something different from the typical burgers or tofu 🙂 Let’s peek? Keep reading!

You will need (serves 4):

  • 2 cups of chickpeas flour (320 g);
  • 2 cups of water (480 ml);
  • 2 leeks;
  • 2 onions;
  • garlic powder;
  • salt;
  • 4 tablespoons of olive oil;
  • pepper;
  • oregano;
  • ground flaxseed (optional).

Let’s start!

Preheat the oven to 180ºC.

Cut the onion coarsely and the leek into slices.  Sauté in olive oil.

Mix the water, flour and seasonings in a blender. Grease a pan (which can go to oven) with olive oil, place the onion and leek and distribute the blender mixture over the top. If you want a crispy layer on top, put ground flaxseed.

Let it cook in the oven for 30 minutes.

P.S. To make the tortilla more colorful add peppers, corn and other vegetables 🙂
