Hello everyone! 🙂 Here’s another recipe, this time from a very traditional dessert: sweet rice! It has been hard to turn an usual sweet rice recipe into a vegan one! But we managed (of course there are always points to improve) and here is the result. Hope you like it 🙂
You will need (serves 12 small bowls):
- 1 bowl of rice (medium grain rice);
- 4 bowls of rice milk;
- cinnamon stick + cinnamon powder;
- lemon peel;
- 30 grams of coconut sugar;
- 1 bowl of water;
- 1 teaspoon of vanilla extract.
(The bowl used as a measure for rice, water and rice milk is the same so as to maintain the ratio 1:1:4).
Put all the ingredients to cook except the rice. Once it is boiling place the rice, stirring occasionally.
Let the rice cook until it is to your own taste (here at home it took about 40 minutes, but depends on the rice).
Remove the lemon peel and the cinnamon stick. Distribute them through the bowls and decorate them with cinnamon powder.
