Another experience that has become an addiction: yes I love this pudding! 😀 It’s easy, vegan and gluten free 🙂 Let’s try it? (Adapted recipe from Gabriela Oliveira).
You will need:
- 1 liter of rice milk;
- 6 tbsps of corn starch;
- 1 tbsp of agar-agar powder;
- 1 orange (zest);
- 4 tbsps of coconut sugar;
- 2 tbsps of Port wine (optional, still unsure if it’s vegan);
- 6 tbsps of brown sugar.
In a blender, place and mix half the milk, the corn starch, agar-agar and the orange zest until the mixture is homogenous.
Add the rest of the milk, port wine and coconut sugar and let it cook for 8 minutes (low heat) until thickened (stir regularly).
To make the caramel, place the sugar in the bottom of a pudding form and cook it (low heat) until melted and caramelized.
Preheat your oven to 180°C.
Put the mixture in the form and cover it. Put the pudding in a tray with hot water and bake for 30 minutes. Remove and it cool completely.
Store in the refrigerator for 4 hours and deform. It’s ready! 🙂
