Vegan & Gluten-free Coconut Cookies

Hello! Do you know when you feel like eating something sweet? We wanted something with coconut, so it it goes. Let’s try it out?

Disclaimer: this was the first time I made these coconut cookies in my life! I know they are usually smaller and like little balls, but I was looking for a cookie ?‍♀️ The recipe doesn’t change, just the way they are going to be shaped so here we go!

Time required: 60 minutes

You will need:

  • 200 grams of grated coconut;
  • Coconut milk (1 can);
  • Vegetable drink (200ml) – the coconut drink gives even more flavor.
  • 4 tablespoons of corn starch (Maizena);
  • 1/2 teaspoon of turmeric (optional);
  • 3 tablespoons of sugar (or substitute);
  • Lemon juice (to taste);

Let’s start!

In a blender, mix the coconut milk, vegetable drink, lemon juice, sugar, corn starch and the turmeric.

Then, take the mixture to a saucepan and bring it to medium heat until it thickens. You must always be mixing it.

As soon as the mixture has thickened, put the pan aside and add the grated coconut, stirring until well distributed.

Now you can make the coconuts in two ways:

? Make without the cake paper cups, placing “spoons” on parchment paper (or aluminium foil paper in my case) and taking it to the oven.

? Allow it to cool down slightly and shape into small balls, placing them in the cake paper cups and then taking them to the oven.

Notice that the recipe from which I adapted this one did not gave instructions regarding the oven’s temperature and time, so I made it just by watching them while cooking. I put them in the oven at 200ºC for about 40/45 minutes, until they are well toasted on top and easy to take them out.

? They last a few days in the refrigerator if well kept .
