Vegan and gluten free bread

As some people know, making gluten-free bread is not the easiest thing, but finally, we discovered a recipe from Sofia Paixão! The bread was super good, it’s not hard to do and it does not make me feel sick! Yey 🙂

You will need:

  • 300 grams of oat flakes (gluten free) or already in flour;
  • 200 grams of rice flour;
  • 100 grams of potato starch;
  • 20 grams of grounded linseed;
  • 2 teaspoons of sea salt;
  • 630 ml of warm water;
  • 20 grams of Psyllium kusk powder;
  • 1 teaspoon coconut sugar or brown sugar;
  • 11 grams of dry baker’s yeast (gluten free).

Let’s start!

If your oatmeal is still in the form of flakes, place it in a food processor and mash until it is in flour.

On measuring cup, add water and sugar and stir well. Add the yeast, stir well and let stand for 5 minutes. Then stir again until well dissolved.

With a mixer (with the blades for the dough) place the flour, the Psyllium, the linseed, the salt and mix until homogeneous. Add the yeast mixture and stir again until homogeneous. Let stand for 3 minutes.

On a counter sprinkled with flour (rice) mold the buns. Sprinkle the buns with flour and cut them with a knife.

Let them leaven, covered with adhering film, until they double in size.

Preheat the oven to 200ºC. Once the buns are twice the size, put them in the oven for 40 minutes (please check, as it will depend on the oven).
