Tofu stroganoff

This super simple stroganoff was invented by me (we did not know what to do for lunch and that’s what came out), and by chance, it came out super good! Everyone loved it and I just want to repeat ? Let’s try it? Keep reading!

You will need (serves 4):

  • 400 grams of tofu (I use a biological one from ALDI);
  • juice of 2 lemons;
  • garlic (I used powder);
  • coriander (dried);
  • 1 pack of mushrooms (the whole ones);
  • Basmati rice (I made one bowl for 4 people);
  • 1 pack of rice cream;
  • pepper;
  • salt. 

Let’s start!

Wash the rice and cooke it. Cut the tofu into little pieces and place them in a bowl with the lemon juice, garlic and coriander. Let them marinate for 15 minutes. Wash the mushrooms and cut them.

Put some olive oil in a frying pan and put in there the tofu and mushrooms. Season with pepper and salt. Let it cook. Once the mushrooms are cooked add the rice cream and stir until well blended.

Meanwhile, the rice is ready and everything is ready to be served!
