Stuffed mushrooms

Is there anything better than mushrooms? I love mushrooms and this recipe is one of my favorites. If you want to try this dish so easy to make and full of flavor, keep reading!

You will need:

  • Large mushrooms, these are Portobello;
  • Tomato;
  • Pepper (if you want a plate full of colors use different type of peppers!);
  • Onion;
  • Garlic;
  • Grated carrot;
  • Oregano;
  • Courgette;
  • Olive oil;
  • Lemon. 

Let’s start!

Begin by preparing a tray (one that can go to the oven) to place the mushrooms as soon as they were ready. Preheat the oven to 220 degrees. 

Pick up the mushrooms, wash them well, cut their feet tightly (we want the “bowl” of the mushroom) and put them on the tray. Cut the feet of the mushrooms in little pieces and place them in a bowl.

Cut the tomato, zucchini, onion and garlic into small pieces (the size will vary according to your taste), and put them in the same bowl where the feet of the mushrooms are.

Scrap the carrot and add it to all the ingredients that were cut, seasoning them with oregano and a little bit of pepper (I used the mill that has  5 types of pepper). If you want some more garlic, put garlic powder. Mix thoroughly until well blended.

So that the ingredients gain flavor sauté everything for about 3 minutes. Add spices during this stage if it still is not the way you like it. 

It’s time to fill the mushroom “bowl”! With a spoon, fill the mushrooms until they are full. Pour olive oil on them and put them in the oven. It will take about 10/15 minutes for the mushrooms to be ready.

If you like, put some lemon juice on top!

To complete your dish you can cook quinoa (wash well before cooking!) and make a nice salad (using a Spiralizer, for instance).
