Rice with veggies + garlic

I love the combination of the spinach and the garlic flavor! If we add beans and rice it gets even better 🙂 This was invented under pressure, but ended up being so tasty and simple that I had to share!

You will need (serves 3 people): 

  • fresh spinach – I used one pack of baby spinach;
  • 1 big can of black beans;
  • one pack of fresh mushrooms;
  • rice;
  • cumin;
  • 8 garlic cloves;
  • white wine;
  • salt;
  • pepper. 

Let’s start!

Begin by cutting the garlic cloves and sauté them in olive oil in a wok. Prepare the mushrooms, cutting them and washing well. Wash the spinach leaves as well.

Put the rice to bake – two bowls of water to one bowl of rice.

As soon as the garlic cloves are golden, add the spinach, mushrooms, and black beans. Mix well. Season with salt, cumin, pepper and a little of white wine (about 2-3 tablespoons).
