Cod “pataniscas” are a typical Portuguese dish, so why not make them vegan? I admit that the first time my mother made the recipe here at home, we were surprised to find it so delicious. Even better these are made in the oven, so no fat! Let’s try? Keep reading.
You will need: (serves 4)
- 1 small courgette;
- 1/2 cup of chickpeas flour;
- 1 linseed “egg” (1 tablespoon of linseed flour to 3 tablepoons of water);
- 1 carrot;
Preheat your oven to 180 degrees.
Grate the curgete and the carrot and place in a container. Add the other ingredients and mix well, with the hands or using a spoon.
Choose a oven tray and put on parchment paper. Make small portions (disks) from your mixture, forming “pataniscas”.
Let it cook for 15 minutes and turn them until they’re golden.
Tip: These “pataniscas” can be sweet or salty, just exchange the courgette for mushrooms, tomato, spinach, tofu, apple, banana, honey, etc.
