Noodles w/ sautéed vegetables and toasted almonds

Is there anything better than sauteed vegetables? I love it and it’s so easy to make 🙂 I also cooked rice noodles and put almonds that were toasted at home. Simple, practical and delicious! Let’s go?

You will need (serves 2/3 people):

  • 1 large courgette;
  • 2 medium carrots;
  • 1 onion;
  • 5/6 garlic cloves;
  • spinach;
  • 1 leek;
  • 1 pack of mushrooms;
  • toasted almond;
  • salt;
  • olive oil;
  • pepper;
  • oregano;
  • paprika.

Let’s start! 

Put olive oil in a wok, cut the onion and the garlic cloves into small pieces, and let it fry until golden.

Slice the carrots, the courgette, the leek and the mushrooms. Put the vegetables in the wok and stir. Season with salt, pepper, paprika and oregano. When they are almost ready, put the rice noodles in boiling water – 5 minutes are enough. 

Once noodles are ready, transfer them to the wok and mix well.

It’s ready! Put the toasted almonds on top before serving 🙂

Tip: To get your meal even more aromatic you can put white wine or soy sauce (beware, it has gluten!).
