These pizzas were the first more elaborate dishes I have made since I arrived in Copenhagen! They were so good and so easy to make that I had to share with you. Hope you like it ♡
This recipe appeared to me through Pinterest and, as I had no ideas for dinner, I decided to try. Eggplant is a food to which )’m still getting used to the taste and to discover new ways to cook, so I was quite pleased to have enjoyed this experience. It was a pleasant surprise: easy, tasty and healthy, of course. Let’s try it?
You will need (serves 2):
- 1 eggplant;
- tomato sauce;
- vegan cheese (I used Violife);
- garlic powder;
- black pepper powder.
Line an oven tray with parchment paper (I used aluminum foil because it was what I had at home).
Preheat the oven to 180 ° C.
Cut the eggplant into slices and place them on the tray. Cover the eggplant slices with tomato sauce, tomatoes (into pieces) and cheese. Season with garlic powder and oregano.
Place the tray in the oven for about 15/20 minutes. It’s ready!
