Cucumber spaghetti with sautéed vegetables

We all have those days when we want a lighter meal… But light does not mean it’s devoid of flavor! Here’s another invention: cucumber spaghetti, simple and full of flavor 🙂

You will need (serves 3):

  • 1 spiralizer 
  • 3 cucumbers;
  • 1 leek;
  • 4 large mushrooms;
  • 1/2 cup of white wine;
  • onion;
  • garlic powder;
  • salt;
  • pepper;
  • herbs;
  • cumin;
  • seeds and/or nuts. 

Let’s start!

Wash the mushrooms, onion and leek. Cut the mushrooms and the leek into slices. Cut the onion into cubes. In a wok, add a little of olive oil and place the onion, cook until golden. Add the mushrooms and the leek. Add 1/2 glass of white wine and season with salt, pepper, herbs and cumin (It will smell so good ).

While cooking the vegetables in the wok, peel the cucumbers, cut the tips straight and spiralize them. Put the spaghetti in a large bowl.

Once the vegetables are cooked, add them to the bowl of the spaghetti and mix well. Add more aromatic herbs if needed! Put seeds and nuts, to make the dish more nutritious! Super easy, super tasty and a different dish 🙂
