Bean stew with potato and cheese

Hello, I hope everything is fine with you! Here’s another adaptation of a non-vegan recipe: bean stew with potatoes and cheese! Hope you like it! I assure you it is delicious!

You will need:

  • 600 grams of butter beans;
  • 1 sweet potato or 3/4 big potatos ( I used the regular ones);
  • 1 tomato;
  • 1 cup of pumpkin;
  • 1 pack of fresh mushrooms;
  • 1 leek;
  • 1 big onion;
  • 4 garlic cloves;
  • olive oil;
  • vegan cheese;
  • paprika;
  • red wine (100 ml);
  • cayenne pepper;
  • chives;
  • salt. 

Let’s start!

Place in a pan olive oil (3 tablespoons), onion and garlic (chopped), leeks (sliced), tomatoes (into pieces), pumpkin (diced), mushrooms (sliced), salt, cayenne pepper and paprika.

Cook over low heat, stirring occasionally.

When the vegetables are almost ready, add a little of hot water, potato (the cubes) and the cooked beans. Keep stirring and let it cook.

When the potato is cooked, add the red wine and let it cook for a few more minutes.

As soon as it is ready, put chives and cheese on top and serve. Enjoy your food!
