Hello everyone! Today I come to show you another day of mine, I hope that in some way, I can inspire you! Everything is vegan and gluten free, of course ♡
In a normal work day I get home at 4.30pm and only then I have my “lunch time”. So this is my day, when I’m free from work, or in the weekend!
Lately I have eaten at breakfast this mix (laughs). Basically it has chia pudding, muesli (gluten-free) or cornflakes, jam (in this case strawberry) and a piece of fruit. I have always prepared chia pudding in the fridge, as both (me and C) like it very much. The recipe for chia pudding can be found here.
Today for lunch I made a kind of a tofu curry. For the “pasta”, I cooked some rice noodles, which are naturally gluten free. The tofu was cut into the cubes and left to “rest” for about 30 minutes in lemon juice and herbs to gain flavor. For the sauce I used a mix of Indian curry powder, garlic, salt and rice cream.
To decorate and give some flavor, I cut a bunch of coriander.
It was delicious.
At snack time I usually eat something light, because around 7:00 pm we usually go jogging /walking. This time it was half of a cantaloupe that was divine!
This “autumn” tray has no fixed receipt. I often put several vegetables, tofu and potatoes. In this case I used pumpkin, potato, onion, chives, spinach, celery and tofu. Seasoned with plenty of aromatic herbs, salt and olive oil and placed in the oven at 160ºC for about 20/30 minutes. It is delicious and is great for dinner as it is not a very heavy meal ♡
This recipe is also great to use vegetables that you have in the fridge and do not know what to do with them!
