This is the easiest meal to make! It was precisely on the eve (at night) that I did not know what to take to lunch (because it was late, I was tired and still had to cook) that it was decided that making a quick salad would be a good idea 😛
I gathered chickpeas, corn, 3 cherry tomatoes, a cucumber and two burgers into pieces. The recipe for these burgers is not here because it is still in a experimental phase 😀 For seasoning I used dry coriander, oregano and sesame and sunflower seeds. It was great!
This recipe tastes good to me both hot and cold! 🙂 Here at home we make in a pressure cooker but it can be perfectly done in a normal pan.
Start by making the sautéed garlic, onion and bay leaf. Then add the tomato pulp, diced tofu, peas, potatoes and the carrots. It is seasoned with salt, pepper, cloves and some white wine. Ready! I do not know how long it takes to bake in a normal pan, but let it cook until the vegetables are cooked.
P.S. In the pressure cooker, 10 minutes is enough 🙂
Tofu nuggets with pasta and vegetables
I love breaded tofu! You can check the recipe here. To complement, I cooked corn pasta, sautéed a few vegetables (Chinese mix) and put some rice cream with aromatic herbs on top. A delight that does not have great difficulty 🙂
Millet with sauteed vegetables and arugula
Until recently only ate millet in popcorn format, the so-called millet puff. We decided to try it cooking it at home and it is great to replace the quinoa 🙂 So I cooked the millet, sautéed red onion with cabbage and added biological arugula from our vegetable garden 😀 So simple and tasty. Obviously you can add a lot of different thing like mushrooms, corn, tofu, etc, but I was in the mood for a simple dish 🙂
Smoked tofu with quinoa and vegetables in the oven
I don’t know about you but I love tofu! It is a super versatile food, which can be cooked in so many ways. This time, as tofu is already smoked you don’t have to do much! Just cut it into strips, put into the oven and eat it ♡ To accompany, I cooked quinoa and put in the oven (with olive oil, greens, salt and garlic powder) broccoli, carrots and mushrooms in slices) – at 220 ° C for about 20 / 30 minutes. So simple and delicious 😀
P.S. I put the veggies and the smoked tofu at the same time in the oven. If you don’t want the tofu to be dry you have to take it out of the oven after about 15 minutes.
