I guess many people who are in transition to vegan or thinking about it, wonder what I should buy? What can not I miss at home? What are the “essentials”? So I decided to show mine and show what to do with them 🙂 Tell me what are your essentials in the comments! Hope you like it!
If you follow me on instagram (here) you know that I adore, love and devour mushrooms! They can be sautéed, cooked in the oven, in a lasagne, a bolognese, anyway … I leave here some recipes in which I use mushrooms.
Gluten free pasta
Who doesn’t like pasta? For those who are celiac ou simply gluten intolerant there are options like rice pasta, corn pasta or even quinoa pasta. You also have many types of pasta: lasagna, spaguetti, fusilli, penne, etc.
A huge protein source! Plus, it combines with everything. There is red, white, black-eyed peas and the black beans 🙂 Sautéed with garlic and spinach it’s sooo good! The best part is that you can make burguers with beans or chickpeas.
There is nothing better that sautéed spinach with a lot of garlic! To me it’s the best thing ever. One bad (well, not so good) thing is that even if you fill your wok with spinach, after 5 minutos it will look almost empty ahaha. There are people that use spinach in their smoothies, but honestly, I haven’t tried it yet.
Do you know when you sautéed onion until is almost brown? It is sooo tasty. I really like to do sautéed onion with smoked tofu steaks, for example 🙂
Garlic is in the same situation as onion and it was also mentioned in the spinach topic, I really need garlic at home, always! I use it almost in all recipes, whether in the natural or in the powder way 🙂
Tomato paste is 100% an essencial to me, specially in those days that I simply don’t know what I am going to eat and I decide to cook some pasta with mushrooms and tomate paste 😀 Don’t you forget that tomate paste is also essencial for pizza, so is mandatory to have at home 😛
Fruit is essential for snacks or for breakfast. I prefer to make smoothies, but I also love to cut fruit and add peanut (or almond) butter, raw cocoa, coconut, oat, etc. Fruit, more specifically, apple can be transformed into a great pie 😀
The rice milk is an essential because it replaces the typical cow milk. For me is the best because it’s neutral, without a strong flavor and I choose the one with no sugar added.
It’s the fat that I use in my food. In addiction to cooking, I love to put olive oil on bread with oregano and garlic powder, it’s so good and a great substitute for butter or margarine.
These little trees are my doom. I love the broccoli cooked but still hard and seasoned with olive oil and vinegar. You can also sauté, pu them in the oven, in lasagne, soups…
I know that lettuces, aren’t so good nutritionally , but I love salad! I could eat a salad every day (ahaha), specially with corn, cucumber and herbs :D
Gluten free bread
Obviously I had to say bread! I use to buy a package in LIDL to do a gluten-free bread, using a bread machine. I really like it! Besides the typical toasts, I use to do pizza toast, adding vegan cheese, tomato paste and oregano 😀

Vegan cheese is one of the best discoveries ever. I don’t eat it every day, but it helps A LOT to recreate non-vegan recipes into vegan. I use it in lasagna, gratins, grilled cheese toasts, bolognese, pizza, etc. There are many brands, some better than others, but this cheese seems like the one made with cow milk: it melts and gains the same consistency 🙂 The cheese that I use to buy doesn’t have soy or palm oil.
Water with pH = 9.5
You must be thinking: oh it’s obvious that you need to have water at home! That is true, but I can’t drink the regular type of water, at least, I shouldn’t. As I already said, an acid body promotes the disease and inflamation developments and who has an auto-immune disease doesn’t want to have an acid body. For me it helps, a lot!, to drink water with pH=9.5, so that’s why this is a must at home 🙂
